Notes

  • Jalapeno Selection: When choosing jalapeno peppers, look for those that are medium in size and have a smooth shape. If you want to check the spice level of the peppers, be careful when cleaning the seeds and use your hands with protective gloves.
  • Balancing Sausage and Cheese: Take care to balance the amount of sausage and cheese. Too much sausage or cheese can lead to an unbalanced flavor profile in the chili.
  • Consistency of the Cheese Mixture: Adjust the consistency of the cream cheese and cheddar mixture to taste. Make sure the mixture has a consistency that is easy to spread and fill the peppers.
  • Sealing the Jalapeno Peppers: When assembling and sealing the jalapeno peppers, be careful to prevent the filling from leaking. You can use a fork or toothpick to close the peppers tightly.
  • Coating with Flour, Egg and Breadcrumbs: Make sure the ingredients are ready before coating the peppers in flour, then beaten egg and finally breadcrumbs. Following these steps in order will help you achieve a crispy outer crust.
  • Oven Baking Watch: Make sure the oven is preheated before placing the armadillo eggs in the oven. Check regularly during the baking process until the top is nicely browned. Overcooking can cause the snack to dry out.
  • Serve Hot: Serve the armadillo eggs hot. The warmth keeps the filling soft and the flavor more pronounced.
