  • 6 large jalapeno peppers

  • 6 sausages

  • 200 grams cream cheese

  • 1 cup grated cheddar cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 cup flour

  • 2 eggs (beaten)

  • 1 cup breadcrumbs or ground crackers


  • Preheat the oven to 200°C (180°C in a fan oven) and line a baking sheet with baking paper.
  • Cut the jalapeno peppers in half and remove the seeds.
  • Place a slice of sausage in each jalapeno half.
  • Mix the cream cheese, cheddar cheese, garlic powder, onion powder, salt and pepper in a bowl.
  • Place some of the cheese mixture on each jalapeno half.
  • Close the jalapenos tightly and secure with a fork or toothpick.
  • Dredge the jalapenos first in flour, then in beaten egg, then in breadcrumbs.
  • Place the prepared armadillo eggs on the baking sheet.
  • Bake in the oven for 25-30 minutes or until the top is nicely browned.
