  • 1 tomato, diced

  • 1/2 cup peas

  • 1/2 cup chicken broth

  • 2 cups hot water or chicken broth

  • Salt, pepper, saffron (optional)

  • Extra virgin olive oil

  • Heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic and sauté until soft.
  • Add the chicken pieces and cook over low heat until the color changes.
  • Add the chopped peppers and peas and cook, stirring for a few minutes.
  • Add the rice and sauté over low heat, stirring, until the rice grains are transparent.
  • Add the diced tomatoes, stir and cook for a few minutes.
  • Add the chicken stock and stir. Add the hot broth or chicken stock.
  • Add salt, pepper and optional saffron. Stir and bring to a boil.
  • Once boiling, reduce the heat to low and cover the pot. Let the pilaf steep for about 15-20 minutes until the water is absorbed and the pilaf is cooked.
  • Stir the pilaf and place it on a serving plate. Garnish with freshly chopped parsley or lemon wedges and serve hot.

  • Choosing Quality Rice: Choosing quality rice is important for a delicious Arroz Caldoso. Using a thick grain type of rice can increase the watery consistency and flavor of the pilaf.
  • Spice Balance: One of the characteristic features of Arroz Caldoso is its spicy flavor. It is important to balance the spices used with chicken or seafood. Keep your flavor under control by using spices such as salt, black pepper and saffron in moderation.
  • Cooking Vegetables Correctly: Cooking vegetables properly ensures that Arroz Caldoso has a fresh and aromatic flavor. Be careful not to overcook the vegetables, as the slight crunch will add an additional touch to the dish.
  • Choice of Chicken or Seafood: The choice of chicken or seafood depends on personal preference. However, make sure that the meat or seafood you choose is fresh and of good quality. If you are using chicken meat, boneless and skinless chicken breast is preferable.
  • Temperature Control: Temperature control is important during the cooking process of pilaf. When the mixture starts to boil after adding water, reducing the fire and letting the pilaf steep will help you get a grainy and juicy consistency.
  • Serve with Lemon or Parsley: Adding lemon wedges or freshly chopped parsley to Arroz Caldoso before serving can add a fresh and light layer of flavor. Lemon adds a slight acidic touch to the dish.
  • Steeping Time: Allowing the pilaf to steep after removing it from the stove ensures that the grains do not stick together and the flavor is distributed homogeneously. It is important to let the rice rest with the lid closed.
  • By following these tips, you can get the most delicious version of Arroz Caldoso and bring this Spanish delicacy to your table. Bon Appetit!
