  • 3 ripe bananas

  • 1/2 cup oil (e.g. sunflower oil or coconut oil)

  • 1 cup brown sugar or coconut sugar

  • 2 eggs

  • 1 teaspoon vanillin extract

  • 2 cups whole wheat flour

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/2 cup walnuts or crushed hazelnuts (optional)

Directions

  • Set the oven to 180°C (preheated). Grease the cake tin or line it with greaseproof paper.
  • Mash the ripe bananas.
  • In a bowl, mix the mashed bananas, oil, brown sugar or coconut sugar, eggs and vanillin extract.
  • In a separate bowl, mix the flour, cinnamon and salt.
