  • 3 ripe bananas, mashed

  • 1/3 cup oil (e.g. coconut oil or sunflower oil)

  • 1/2 cup brown sugar or coconut sugar

  • 1 egg

  • 1 teaspoon vanillin extract

  • 1 1/2 cup whole wheat flour

  • 1/2 cup oatmeal

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/2 cup crushed walnuts (optional)

  • 1/2 cup raisins or dried cranberries (optional)


  • Preheat the oven to 180°C (350°F). Lightly grease a loaf tin or line it with greaseproof paper.
  • In a large mixing bowl, whisk together the mashed banana, oil, brown sugar and vanillin extract. Add the egg and mix well.
  • In a separate bowl, combine the whole wheat flour, oatmeal, cinnamon and salt.
  • Add the dry ingredients to the banana mixture and mix using a spatula or wooden spoon. Add the walnuts and dried fruits and continue mixing until you get a homogeneous mixture.
  • Pour the mixture into the bread mould that you have greased or covered with greaseproof paper.
  • Bake in the preheated oven until the top is well browned and a toothpick inserted into it comes out clean. It may take approximately 45-50 minutes.
  • After removing it from the oven, let it cool slightly in the bread mould, then transfer it to a wire rack to cool completely.


  • You can adapt the ingredients in the recipe according to your personal preferences. For example, you can use hazelnuts or almonds instead of walnuts or dried apricots instead of raisins.
  • If you want to reduce the amount of sugar, you can use grated apple or coconut sugar as a sweetener.
