  • Mash the ripe bananas well with a fork or masher. Add the coconut oil or melted butter, brown sugar and vanillin extract and mix well.
  • Add the oatmeal, flour, salt and optional cinnamon. Mix until the mixture is well homogenised.
  • If using, add the chopped walnuts or hazelnuts and mix again.
  • Take walnut-sized pieces from the dough, roll them in the palm of your hand and place them on the tray lined with greaseproof paper. Press lightly to give the cookie shape.
  • Bake in the preheated oven for 12-15 minutes or until the edges turn slightly golden.
  • Leave the cookies to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
  • You can store the cooled banana cookies in an airtight container before serving.

  • Using Ripe Bananas: The riper the bananas, the more flavourful the cookies will be. Ripe bananas add natural sweetness and an extra density. It also makes the cookie dough more moist.
  • Choice of Coconut Oil or Butter: Coconut oil adds a light coconut flavour to the recipe. However, butter also provides the same flavour. Which one to use depends entirely on your personal preference.
  • Oatmeal Preference: Oatmeal is an important component that determines the consistency of the cookies. By choosing oatmeal with a little coarse particles, you can get a textural variety in the cookies.
  • Flour Amount: Adjust the amount of flour carefully. If the dough is too liquid, you can add a little more flour. This will determine the consistency and texture of the cookies.
  • Vanillin Extract and Spices: The vanillin extract and cinnamon added to the recipe add a rich flavour to the cookies. By using these ingredients in moderation, you can strengthen the taste of banana cookies.
  • Adding Walnuts or Hazelnuts: Chopped walnuts or hazelnuts add textural variety and extra flavour to cookies. However, since it is optional, you can add or remove it according to your preference.
  • Equal Size Pieces: Rolling the pieces of cookie dough into equal sized pieces ensures even baking. Thus, you ensure that the cookies have the same consistency.
  • Cooking Time Control: Check the cooking time in the oven carefully. Remove when the edges turn slightly golden. The remaining heat in the oven allows the edges of the cookies to brown even more.
  • Cooling Phase: The cookies may be soft at first after they come out of the oven. For this reason, allow the cookies to cool on the tray for a few minutes and then transfer them to a wire rack to cool completely.
  • By following these tricks, you can ensure that your banana cookies are delicious, soft and thick. Bon Appetit!
