  • 2 ripe bananas

  • 1/2 cup coconut oil (or melted butter)

  • 1/2 cup brown sugar

  • 1 teaspoon vanillin extract

  • 2 cups oatmeal

  • 1/2 cup flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon (optional)

  • 1/2 cup walnuts or hazelnuts (optional, chopped)

Directions

  • Preheat the oven to 180°C (350°F) and grease a baking tray or line it with greaseproof paper.
  • Mash the ripe bananas well with a fork or masher. Add the coconut oil or melted butter, brown sugar and vanillin extract and mix well.
  • Add the oatmeal, flour, salt and optional cinnamon. Mix until the mixture is well homogenised.
  • If using, add the chopped walnuts or hazelnuts and mix again.
  • Take walnut-sized pieces from the dough, roll them in the palm of your hand and place them on the tray lined with greaseproof paper. Press lightly to give the cookie shape.
  • Bake in the preheated oven for 12-15 minutes or until the edges turn slightly golden.
  • Leave the cookies to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
