Prep time

Cooking time

  • 1 cup black flour (whole wheat or buckwheat flour can be preferred)

  • 3 cups of milk

  • 1 cup granulated sugar

  • 3 tbsp cocoa

  • 2 tbsp corn starch

  • 1 tsp salt

  • 1 tsp vanillin sugar

  • 50 grams dark chocolate (optional, grated)

  • 2 tbsp butter

  • In a saucepan, roast the black flour over medium-low heat until it starts to smell lightly. The roasting process ensures that the flour turns slightly darker in colour.
  • Add the milk and stir constantly to avoid lumps. Bring to a boil over low heat.
  • In a separate bowl, mix the granulated sugar, cocoa, corn starch, salt and vanillin sugar. Slowly add the mixture to the milk and flour mixture, stirring constantly to avoid lumps.
  • Keep stirring until the mixture reaches a thick consistency. Add the grated dark chocolate, if using, and stir.
  • Add the butter and cook the pudding mixture by stirring until it thickens.
  • Remove from the stove and divide the pudding into bowls or mugs. Let it stand until it reaches room temperature.
  • Before serving, cover it with cling film and let it rest in the refrigerator for at least 2-3 hours.

  • Roasting the flour: Be careful when lightly roasting the flour in the pan. Keep stirring until the flour has darkened in colour and its distinctive smell is released. This stage is critical to enriching the flavour profile of the pudding.
  • Continuous Stirring of the Mixture: Continuous stirring while the milk is being added and then while the pudding mixture is cooking is important to prevent lumps and ensure a homogenous consistency. Stirring over low heat ensures that the pudding has a smooth texture.
  • Adding Dark Chocolate: The grated dark chocolate to be added to the recipe is an important ingredient that balances the sweetness of the pudding and adds a unique character to it. Using a quality chocolate with a high cocoa content improves the quality of the flavour.
  • Adding the Butter: Stirring the butter at the last stage of the recipe enriches the consistency of the pudding. Butter complements the flavour of the pudding by increasing its creamy texture and density.
  • Resting Time: Resting the cooked pudding in the refrigerator allows the flavours to blend better. Keeping it in the refrigerator for at least 2-3 hours as a minimum time improves the consistency and flavour of the pudding.
  • Preparing the Black Pudding Recipe by paying attention to these tricks will allow you to achieve a more successful and delicious result. Bon Appetit!
