Ingredients

  • 1 kg fresh raw peanuts

  • 1 water glass salt

  • 3 tablespoons Cajun spice mix

  • 1 lemon (quartered)

  • 3 whole garlic heads

  • 2 tablespoons of red chilli powder (optional)

  • Water

Directions

  • Wash the fresh raw peanuts thoroughly and place in a large saucepan.
  • Add the salt, Cajun spice mix, lemons and whole garlic heads. Optionally, you can also add the chilli powder.
  • Add enough water to cover the peanuts and mix well.
  • Place the pot over medium heat and when the mixture starts to boil, reduce the heat to low. Then close the lid of the pot.
  • Simmer the pistachios over low heat for 3-4 hours. Check the water occasionally and add more if necessary.
  • Check the softness of the peanuts and remove from the stove when they reach the desired consistency.
  • Drain the boiled peanuts and place on a serving plate.
  • Serve hot or keep it until it cools down and serve.
