  • 1 cup brown flour

  • 1 cup oatmeal

  • ½ cup coconut flour

  • ½ cup melted coconut oil

  • 1/3 cup honey or maple syrup

  • 1 egg (optional, you may not use if you are vegan)

  • 1/2 cup unsweetened chocolate chips

  • 1 tsp vanillin extract

  • ½ teaspoon baking powder

  • A pinch of salt


  • Preheat the oven to 180 degrees and line a baking tray with greaseproof paper.
  • In a mixing bowl, combine the brown flour, oatmeal, coconut flour, baking powder and salt.
  • In another bowl, mix the melted coconut oil, honey or maple syrup, vanillin extract and (optional) egg.
  • Add the wet mixture to the dry mixture and mix well.
  • Add the unsweetened chocolate chips and mix until you get a homogeneous dough.
  • Pick walnut-sized pieces from the dough, roll them in the palm of your hand and place them on a baking tray lined with greaseproof paper.
  • Bake in the preheated oven for about 10-12 minutes until the edges are slightly browned.
  • Allow the hot cookies to cool slightly, then transfer them to a wire rack to cool completely.
