  • For Macarons (Meringue):

  • 4 egg whites

  • 1 cup granulated sugar

  • 1 tsp corn starch

  • 1 tsp vinegar or lemon juice

  • ½ tsp vanillin extract

  • For Lemon Cream:

  • 1 cup freshly squeezed lemon juice

  • 1 glass of water

  • 1 cup granulated sugar

  • 3 tbsp corn starch

  • 4 lemon zest

  • 3 egg yolks

  • 2 tbsp butter

  • For Meringue Coating:

  • 3 egg whites

  • 1 cup granulated sugar

  • ½ tsp lemon juice


  • Set the oven to 150 degrees. Spread the meringue base on a tray lined with greaseproof paper or a silicone baking mat.
  • Whisk the egg whites until foamy. Add half of the sugar and whisk the mixture until stiff.
  • Add the remaining half of the sugar and continue whisking until the mixture is stiff.
  • Add the corn starch, vinegar or lemon juice, vanillin extract and mix.
  • Put the prepared mixture into a piping bag and squeeze it onto the greaseproof paper by drawing circles of the desired size.
  • Bake in the oven for 1 hour. After baking, open the oven door and wait for it to cool down.
  • For the lemon cream; mix lemon juice, water, sugar, corn starch and lemon zest in a pot.
  • Cook the mixture by stirring constantly until it starts to boil. After boiling, cook for 2 more minutes and remove from the stove.
  • Put the egg yolks in a bowl. Add the lemon mixture you have prepared by stirring slowly.
  • Put the mixture back into the pot, add the butter and cook until it thickens while stirring.
  • Leave the lemon cream to cool.
  • For the meringue coating; whisk the egg whites until foamy. Add half of the sugar and continue whisking until the mixture becomes stiff.
  • Add the remaining half of the sugar and whisk until the mixture is stiff. Add the lemon juice and whisk a little more.
  • Spread the cooled lemon cream over the meringues.
  • Put the meringue coating into a piping bag and decorate the pie as you wish.
  • Lightly toast the top with a hotplate or an oak flame.
