Cooking time

  • 4 large egg whites (at room temperature)

  • 1 water glass of granulated sugar

  • Half a teaspoon of vanillin sugar or vanillin extract

  • 1 teaspoon of vinegar or lemon juice

  • 2 tablespoons starch

  • 1 tablespoon apple cider vinegar (optional)

  • A pinch of salt

  • Preheat the oven to 150 degrees and line a baking tray with greaseproof paper.
  • Put the egg whites, salt and vinegar (or lemon juice) in a bowl. Make sure the eggs are at room temperature.
  • Whisk the egg whites with a mixer. Gradually add granulated sugar until it turns to snow.
  • Add vanillin sugar or vanillin extract and continue whisking.
  • Add the starch and beat well with a mixer. Continue whisking until your dough has a smooth and shiny consistency.
  • Pour the mixture into the prepared tray lined with greaseproof paper. There is no need to shape the dough, just let it spread on its own.
  • Bake in the oven until the top is lightly browned. This can usually take up to 1 hour.
  • Switch off the oven and leave the cloud dough to cool in the oven.
  • Once cooled, carefully separate the dough from the paper and you can slice and serve.

  • Room Temperature Ingredients: Before beating the egg whites, make sure the eggs are at room temperature. Room temperature egg whites will foam and rise better.
  • Clean Tools and Ingredients: Make sure your mixer and mixing bowl are oil-free and dry. Oily surfaces can prevent the foam from rising.
  • Add Sugar Slowly: Add your granulated sugar slowly as you beat the egg whites. The slow dissolution of the sugar will help you achieve a more stable foam.
  • Create a Hard Peak: When you beat the egg whites, create a stiff, glossy foam with steep peaks. This allows the cloud dough to rise.
  • Add Starch: Starch supports the structure of the dough, contributing to a fluffy and light texture. However, it should be added in small amounts and mixed in carefully.
  • Leave to Cool in the Oven: When baking the cloud dough in the oven, switch off the oven and let it cool in it. This will help prevent the dough from collapsing.
  • Allow to Cool Before Serving: After slicing the cloud dough, allow it to cool completely. Hot dough can be softer, so you will get a better consistency after it has cooled completely.
  • By taking these tips into consideration, you can prepare your cloud dough with a better result and achieve a light, fluffy dessert.
