Ingredients

  • 4 coho salmon fillets

  • 2 tbsp olive oil

  • 2 tbsp fresh lemon juice

  • 2 cloves of garlic (optional, grated)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp chilli powder

  • 1 tsp turmeric powder (optional)

  • To Serve With:

  • Fresh chopped dill

  • Sliced lemon

Directions

  • Preheat the oven to 200 degrees.
  • Wash the salmon fillets thoroughly and pat dry with paper towels.
  • In a large bowl, combine the olive oil, fresh lemon juice, grated garlic (if using), salt, pepper and optional turmeric powder.
  • Dip the salmon fillets into this marinade mixture and coat well on all sides. Marinate the fillets in the refrigerator for at least 30 minutes.
  • Place the salmon on a baking tray. Spread some of the marinade over them.
  • Bake in the preheated oven for about 15-20 minutes until the salmon are golden brown.
  • Remove the cooked salmon from the oven. Sprinkle freshly chopped dill over them.
  • Serve with sliced lemon.
