  • 2 cups of corn flour

  • 1 water glass whole wheat flour

  • 1 packet of baking powder

  • Half a tea glass of extra virgin olive oil

  • 3 eggs

  • 1 cup grated fresh corn

  • 200 grams of boiled and chopped crayfish

  • Half a glass of yoghurt

  • 1 teaspoon salt

  • Half tea glass finely chopped spring onion


  • Preheat the oven to 180 degrees and prepare a tray lined with greaseproof paper.
  • In a mixing bowl, mix the cornflour, whole wheat flour and baking powder well.
  • In a separate bowl, whisk the eggs and add the extra virgin olive oil. Add the yoghurt and salt and mix.
  • Add the dry mixture to the wet mixture and mix with a spatula until you get a homogenous dough.
  • Add the grated fresh corn, chopped celery and finely chopped spring onion. Mix the mixture gently.
  • Pour the dough onto a baking tray lined with greaseproof paper and flatten.
  • Bake in the preheated oven for 30-40 minutes until the top is nicely browned. You can check the doneness with a toothpick test.
  • After resting the bread out of the oven, slice and serve. If you want, you can garnish it with fresh herbs.
