Ingredients

  • 250 grams of vermicelli or ramen noodles

  • 2 tablespoons of oil

  • 2 cloves of garlic, finely chopped

  • 1 tablespoon fresh ginger, grated

  • 1 medium carrot, julienne diced

  • 1 cup broccoli florets

  • 1 cup courgette, sliced

  • 1/4 cup soya sauce

  • 2 tablespoons hot sauce (optional, you can adjust the amount according to your taste)

  • 1 tablespoon honey or maple syrup

  • Salt and pepper, to your taste

Directions

  • Boil the noodles or ramen noodles according to the instructions on the packet. Then drain and set aside.
  • Heat the oil in a large pan. Add the chopped garlic and grated ginger. Saute for a few minutes, until their odours are released.
  • Add julienned carrots, broccoli florets and sliced courgettes. Stir the vegetables and cook over low heat. Saute until the vegetables are slightly softened.
  • Add soy sauce, hot sauce (if using), honey or maple syrup, salt and pepper. Mix the mixture well.
  • Add the boiled noodles or ramen noodles to the vegetables. Blend the mixture well and cook for a few more minutes.
  • Make sure that all ingredients are well mixed before serving.
  • Serve hot and optionally you can add fresh chopped greens or sesame seeds.

Notes

  • Use Fresh Ingredients: Try to use fresh vegetables whenever possible. This improves the flavour and texture of the dish.
  • Cook the Noodles Correctly: Cook the noodles or ramen noodles completely, but avoid boiling them too much. Overcooked noodles or noodles can be sticky.
  • Chop Vegetables Evenly: Chop the vegetables in similar sizes so that they all cook in the same amount of time. This helps you achieve a homogenous consistency.
  • Use Hot Sauce in Control: Adjust the amount of hot sauce according to your taste. You can add a little more for those who like bitter, but be moderate as everyone’s tolerance to bitterness is different.
  • Soya Sauce and Salt: Since soy sauce is already salty, be careful not to add extra salt. Add salt according to your taste and constantly check the dish by tasting it.
  • Fast Cooking: Take care to cook the vegetables quickly. This helps the vegetables retain their freshness and crunchiness.
  • Add Fresh Greens: Adding fresh chopped greens before serving adds freshness and colour to the dish. Consider options such as parsley, fresh coriander or green onions.
  • Personalisation: You can adapt the recipe to your own taste. For example, you can add sesame oil or squeeze lemon juice.
  • With these tips in mind, you can prepare a delicious and eye-catching Crybaby Noodles dish. Bon appetit!
