  • 250 grams of vermicelli or ramen noodles

  • 2 tablespoons of oil

  • 2 cloves of garlic, finely chopped

  • 1 tablespoon fresh ginger, grated

  • 1 medium carrot, julienne diced

  • 1 cup broccoli florets

  • 1 cup courgette, sliced

  • 1/4 cup soya sauce

  • 2 tablespoons hot sauce (optional, you can adjust the amount according to your taste)

  • 1 tablespoon honey or maple syrup

  • Salt and pepper, to your taste


  • Boil the noodles or ramen noodles according to the instructions on the packet. Then drain and set aside.
  • Heat the oil in a large pan. Add the chopped garlic and grated ginger. Saute for a few minutes, until their odours are released.
  • Add julienned carrots, broccoli florets and sliced courgettes. Stir the vegetables and cook over low heat. Saute until the vegetables are slightly softened.
  • Add soy sauce, hot sauce (if using), honey or maple syrup, salt and pepper. Mix the mixture well.
  • Add the boiled noodles or ramen noodles to the vegetables. Blend the mixture well and cook for a few more minutes.
  • Make sure that all ingredients are well mixed before serving.
  • Serve hot and optionally you can add fresh chopped greens or sesame seeds.
