  • 2 potatoes (peeled and diced)

  • 2 carrots (cleaned, chopped into rings)

  • 1 aubergine (diced)

  • 1 red chilli (large chopped)

  • 1 yellow chilli (large chopped)

  • 1 onion (large chopped)

  • 3 cloves of garlic (chopped)

  • 3 tablespoons tomato paste

  • 2 tablespoons of olive oil

  • 1 tea glass of hot water or vegetable broth

  • Salt, black pepper, red chilli flakes (according to your taste)

Directions

  • Set the oven to 200 degrees (preheated).
  • Place the vegetables in a large casserole dish.
  • Mix the tomato paste, olive oil and hot water in a bowl.
  • Pour the mixture over the vegetables.
  • Season with salt, black pepper and crushed red pepper flakes and wait for a while before stirring.
