  • 400 grams of pasta
  • 3 large onions, thinly sliced

  • 2 tablespoons of butter

  • 1 tablespoon olive oil

  • 1 cup grated gruyere cheese

  • 1/2 cup grated parmesan cheese

  • Salt and black pepper (according to taste)

  • 1 teaspoon of granulated sugar

  • 3 cups hot water (optional, for cooking pasta)


  • Cook the pasta according to the instructions on the packet. Drain and set aside.
  • Melt the butter and olive oil in a large frying pan. Add the thinly sliced onions and caramelise over low heat for about 20-25 minutes until golden.
  • Add the sugar and stir, the onions will turn caramel colour in the process.
  • Add the hot pasta to the caramelised onions and mix.
  • Add the gruyere cheese and parmesan cheese, stir to melt the cheese.
  • Season with salt and black pepper to taste.
