  • 1 pound (about 450g) dried navy beans

  • 1 onion, finely chopped

  • 1/2 cup molasses

  • 1/3 cup brown sugar

  • 1/4 cup ketchup

  • 1 tablespoon mustard

  • 1 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 pound salt pork or bacon, diced

  • 1/4 cup maple syrup (optional for added sweetness)

  • 1/4 teaspoon ground cloves (optional)

Directions

  • Rinse the dried navy beans and soak them in water overnight. Alternatively, you can use the quick soak method by boiling the beans for 2 minutes, removing them from heat, and letting them soak for 1 hour.
  • After soaking, drain and rinse the beans. Place them in a large pot, cover with water, and bring to a boil. Reduce heat and simmer for 45 minutes to 1 hour or until the beans are tender but not mushy. Drain.
  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine the chopped onion, molasses, brown sugar, ketchup, mustard, salt, and black pepper. Mix well.
  • Place the cooked beans in a baking dish. Add the diced salt pork or bacon. Pour the sauce over the beans and stir until well combined.
  • Cover the baking dish with a lid or aluminum foil. Bake in the preheated oven for 2 to 3 hours, or until the beans are tender and the sauce has thickened. Check occasionally and stir, adding water if needed to prevent drying out.
