Ingredients

  • 2 cups fresh spinach leaves (washed and chopped)

  • 1 cup coloured cherry tomatoes (half or whole)

  • 1 cucumber (sliced into rings)

  • 1 carrot (grated)

  • 1 red chilli (sliced into rings)

  • ½ red onion (thinly sliced)

  • ¼ cup walnuts (optional)

  • Dressing

  • 3 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 clove of garlic (crushed)

  • Salt and black pepper (optional)

Directions

  • Chop the fresh spinach leaves and put them in the salad bowl.
  • Add cherry tomatoes in halves or whole.
  • Slice the cucumber into rings and add to the salad.
  • Grate the carrot and add to the salad.
  • Slice the red pepper into rings and add to the salad.
  • Mix the thinly sliced red onion into the salad.
