Ingredients

  • 3 cups flour

  • 1 packet instant yeast

  • 1 tsp salt

  • 1 tsp granulated sugar

  • 1 glass of warm water

  • 2 tbsp vegetable oil

  • 1 cup chopped black olives

  • 1 cup chopped green olives

  • 1 tbsp olive oil (for spreading)

  • Fresh thyme or dried thyme (optional)

Directions

  • Put the flour in a bowl, make a pool in the centre.
  • Add yeast, salt, sugar, warm water and oil into the centre. Knead the dough by stirring gently.
  • Cover the dough and leave it to ferment, wait until the dough doubles in size.
  • Add the chopped black and green olives to the risen dough. Knead the dough again.
  • Place the dough into the bread mould, cover and leave to ferment again.
  • Brush the fermented dough with olive oil and sprinkle with fresh or dried oregano as desired.
  • Bake in a preheated 180°C oven until golden brown.
  • After baking, let it warm up, slice and serve.
