Ingredients

  • 1 glass of pickle juice

  • 1 cup chopped pickles

  • 2 tbsp butter or oil

  • 3 tbsp flour

  • 4 cups chicken or vegetable broth

  • Half a glass of cream or strained yoghurt

  • Salt and black pepper

  • For Topping

  • Toasted bread cubes

  • Butter (optional)

  • Dried mint (optional)

Directions

  • Melt the butter or oil in a large pot. Add the flour and fry until it starts to smell.
  • Add the chopped pickles and pickle juice and cook for a few more minutes.
  • Add chicken or vegetable stock little by little and stir. Let it boil over low heat.
  • Add the cream or strained yoghurt into the soup and stir. Season with salt and black pepper.
  • Switch off the heat after the soup boils.
  • Before serving, you can garnish with toasted bread cubes and optionally dried mint fried in melted butter.
