  • 4 Snook fillets

  • Juice of 1 lemon

  • 3 tbsp olive oil

  • 2 cloves of garlic, crushed

  • Salt and black pepper

  • 1 tsp dried thyme (optional)

  • 1 tsp grated lemon rind

  • Fresh coriander or parsley (for garnish)

Directions

  • Preheat the oven to 200°C.
  • Wash and dry the snook fillets. Place them on a baking tray.
  • Prepare the sauce by mixing the lemon juice, olive oil, crushed garlic, salt, pepper, thyme and lemon peel in a large bowl.
  • Spread the sauce on both sides of the snook fillets to cover them well.
