  • 1 cup quinoa

  • 2 cups chicken broth or vegetable broth

  • 2 chicken breasts (diced)

  • 1 large carrot (cut into rings)

  • 1 cup broccoli florets

  • 1 red chilli (diced)

  • 1 yellow pepper (diced)

  • 1 clove of garlic (crushed)

  • 2 tbsp olive oil

  • Salt, black pepper, dried thyme (optional)


  • Wash the quinoa and add it to the pot with the chicken stock or vegetable stock. Stir the pot gently and place in the airfryer basket.
  • Add the chicken breast, carrots, broccoli, red pepper and yellow pepper to the pot. Add the crushed garlic.
  • Add olive oil, salt, pepper and optionally dried oregano. Mix all the ingredients.
  • Set the airfryer to 180 degrees and cook for 20-25 minutes. Stir occasionally to ensure that the ingredients cook evenly.
  • Carefully remove the pot after cooking. Let it rest for a few minutes before serving.
