  • For Pudding
    6-7 slices of stale bread (crusts removed)

  • 2 cups coconut milk

  • 1 cup grated fresh coconut

  • 1 cup sugar

  • 3 eggs

  • 1 teaspoon vanillin extract

  • 1 teaspoon cinnamon

  • Half teaspoon grated fresh ginger (optional)

  • Half a glass of butter (melted)

  • For Caramel
    1 water glass granulated sugar

  • 2 tablespoons of water


  • Bread Preparation: Cut the stale bread slices into small pieces. Pour the coconut milk over the bread and soak the bread with the milk.
  • Pudding Mix: Put the grated coconut, sugar, eggs, vanillin extract, cinnamon and optionally grated fresh ginger in a bowl. Beat the mixture well with a whisk or mixer. Then add the melted butter and mix again.
  • Caramel Preparation: Mix granulated sugar with water in a saucepan. Cook the mixture over medium heat, stirring until the sugar dissolves and turns caramel colour. Then quickly pour the caramel into a cake mould or small moulds into which you will divide the pudding.
  • Preparing the Pudding: Add the prepared bread slices into the bowl soaked with coconut milk. Pour the pudding mixture on it. Make sure that all ingredients are well mixed.
  • Cooking: Bake in a preheated oven set to 180 degrees until the pudding mixture thickens and the top is well browned. This usually takes 45-50 minutes.
  • Serving: Let the hot pudding rest for a while, then turn it upside down and serve. Garnish with extra grated coconut or fresh fruit.

  • Pudding Mix: When you whisk the egg mixture, whisk well until you get a homogeneous consistency. The consistency of the pudding depends on the uniform distribution of the egg mixture.
  • Cooking Time: While cooking the pudding, check until the top is nicely browned. You can check whether the inside is cooked by inserting a toothpick or knife. If the inside comes out clean, the pudding is cooked.
  • Resting Time: After removing the pudding from the oven, let it rest for a while. Serving hot can help you pour the caramel more easily and slice the pudding better.
