Ingredients

  • 1 cup chicken breast (diced)

  • 1 cup carrot (grated)

  • 1 cup sugar peas or fresh peas

  • 1 cup courgette (diced)

  • 1 cup potato (diced)

  • 1 cup coconut milk

  • 1 tablespoon of oil

  • 1 onion (grated)

  • 3 cloves of garlic (crushed)

  • 1 tablespoon Jamaican spice mix (or a mixture of black pepper, cumin, ground ginger)

  • Salt and black pepper

  • 6 cups chicken broth or water

  • 1 cup pasta or noodles

Directions

  • Heat the oil in a pot, add the grated onion and crushed garlic and fry.
  • Add the chicken breast pieces and continue to roast over low heat until the water is released and absorbed.
  • Add the spice mixture and mix.
  • Add grated carrot, chopped courgette and potato to the pot.
  • Add chicken broth or water and bring to a boil. After boiling, reduce the heat and cook until the vegetables are soft.
