  • 1 litre milk (preferably whole milk)

  • 2 tablespoons fresh lemon juice or vinegar

  • Salt (optional)


  • Heat the milk in a saucepan over medium heat and remove from the heat before it starts to boil. Having your milk fresh and whole will help you achieve a more flavourful keto cottage cheese.
  • After heating the milk, add the fresh lemon juice or vinegar. Allow the milk to coagulate while stirring. This step allows the cheese to take shape by curdling the milk.
  • When the milk has completely coagulated, strain the liquid in a colander or cheese cloth. The strained liquid is known as whey and will usually be yellow in colour.
  • Squeeze the resulting clot in a cheese cloth to remove the excess whey. This step will make your cheese darker and denser.
  • Put the clot in a bowl and mix it with salt. You can adjust the amount of salt according to your taste.
  • Place the prepared keto cottage cheese in a cheese mould and refrigerate for at least a few hours (preferably overnight).
