Ingredients

  • For Bechamel Sauce:
    4 tablespoons of butter

  • 4 tablespoons flour

  • 4 cups of milk

  • Salt, black pepper, nutmeg

  • For Ricotta Mixture:
    2 cups ricotta cheese

  • 1 egg

  • 1 cup grated parmesan cheese

  • Salt, black pepper

  • For Lemon Pesto:
    2 cups fresh basil

  • 1 cup fresh parsley

  • 1 cup grated parmesan cheese

  • 1 cup pine nuts

  • 2 cloves of garlic

  • Half a glass of olive oil

  • 1 lemon juice and grated lemon

  • Salt, black pepper

  • Other Ingredients
    Lasagne dough (pre-boiled)

  • 2 cups grated mozzarella cheese

Directions

  • Bechamel Sauce Preparation: Melt the butter in a medium saucepan. Add flour and roast over low heat until it smells. Then slowly add the milk and stir constantly. When the sauce thickens, season with salt, black pepper and nutmeg. Remove from the stove and set aside.
  • Ricotta Mix Preparation: Mix ricotta cheese, egg, parmesan cheese, salt and pepper in a bowl.
  • Lemon Pesto Preparation: Blend basil, parsley, parmesan cheese, pine nuts, garlic, olive oil, lemon juice and zest in a blender or food processor until smooth. Season with salt and pepper to taste.
  • Assembly Process: Pour a little béchamel sauce on the bottom of a baking dish. Place the boiled lasagne dough on top. Add a layer of the ricotta mixture on top. Then spread the lemon pesto sauce. Repeat this process to use all the ingredients. Sprinkle the béchamel sauce and grated mozzarella cheese on top.
  • Cooking: Bake in a preheated 180°C oven for about 30-35 minutes, until well browned.
  • Serving: Leave the lemon lasagne out of the oven to rest. Slice and serve hot.
