  • 1 cup flour

  • 1/2 cup corn starch

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup butter (at room temperature)

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 cup ricotta cheese

  • 1 tsp vanillin extract

  • Grated rind of 2 lemons

  • 1/4 cup freshly squeezed lemon juice


  • Preheat the oven to 180°C (350°F). Grease and flour a medium-sized cake tin.
  • Sift the flour, cornstarch, baking powder and salt into a bowl. Set the mixture aside.
