Ingredients

  • 2 cups peas (frozen or fresh)

  • 3 eggs

  • 1 water glass of oil

  • Half a glass of yoghurt

  • 1 water glass of granulated sugar

  • 2 cups flour

  • 1 packet of baking powder

  • Half teaspoon salt

  • Half a teaspoon of black pepper

  • Half a glass of grated feta cheese (optional)

  • Half a glass of finely chopped fresh mint or dill

Directions

  • Preheat the oven to 180°C (preheated). Grease your cake tin or line it with greaseproof paper.
  • Boil the peas in a little salted water. Drain the boiled peas and leave to cool.
  • Beat the eggs in a large bowl. Add the oil and yoghurt and mix well.
  • Add granulated sugar and whisk the mixture.
  • In a separate bowl, mix the flour, baking powder, salt and black pepper.
  • Add the dry ingredients to the egg mixture and mix with a spatula or wooden spoon. Continue mixing until you get a homogenous consistency.
  • Add the cooled peas, grated feta cheese and chopped fresh mint or dill. Mix gently.
  • Pour the mixture into the greased cake mould.
  • Bake in the preheated oven for 45-50 minutes by checking the cake with a toothpick or a knife. If the toothpick or knife comes out clean, your cake is ready.
  • Let the baked cake rest for a while before removing it from the mould. Then you can slice and serve.

Notes

  • Pea Preparation: If using frozen peas, allow them to thaw in advance. If using fresh peas, clean them thoroughly and boil or steam them. Fresh and flavourful peas will improve the quality of your cake.
  • Whisking Eggs and Sugar: Whisking the eggs and sugar well will make the cake light and fluffy. Avoid whisking at high speed, medium speed is sufficient.
  • Oil and Yoghurt Balance: Oil and yoghurt make the cake moist and soft. It is important to use these ingredients in a balanced way. Adjust the measurements correctly to avoid an overly oily cake.
  • Flour and Baking Powder: Avoid overmixing when adding the flour and baking powder mixture. After adding the flour, only stir the mixture to homogenise it. Over-mixing can cause the cake to be dense.
  • Spices and Cheese Optional: Ingredients such as black pepper, salt and optional feta cheese play an important role in adding a unique flavour to the cake. However, remember to adjust the amount of spices according to your personal taste.
  • Cooking Temperature and Time: Use a medium baking temperature in a preheated oven. Prevent your cake from drying out by baking it longer at a lower temperature.
  • Toothpick Test: Use a toothpick or knife to check whether the Pea Cake is cooked. If it comes out clean when you dip it into the cake, your cake is ready.
  • Resting: After removing the cake from the oven, let it rest in the mould for a while. This prevents your cake from sticking and makes it easier to slice.
  • By taking these tips into consideration, you can get a delicious and eye-catching Pea Cake.
