Cooking time

  • For Base:

  • 200 grams of whole wheat biscuits

  • 100 grams butter (melted)

  • For Cheesecake:

  • 600 grams of labne cheese

  • 200 grams of granulated sugar

  • 3 eggs

  • 1 cup sour cream

  • 1 tsp vanillin extract

  • For Topping:

  • 200 ml strawberry sauce or optional fruit sauce

  • Preheat the oven to 180 degrees.
  • Grind the biscuits in a rondo to a powder. Mix with the melted butter.
  • Spread the mixture on the bottom of a clamped cake mould by pressing it well. Let it rest in the fridge.
  • Whisk the labne cheese, granulated sugar, eggs, sour cream and vanillin extract in a large mixing bowl.
  • Pour the mixture over the biscuit base.
  • Bake in the preheated oven for about 45-50 minutes, until the edges of the cheesecake are well browned and the centre is slightly wobbly.
  • Leave the cheesecake to cool at room temperature, then refrigerate for at least 4-5 hours.
  • Pour the strawberry sauce or your preferred fruit sauce over the cheesecake before serving.
  • Slice and serve.

  • Keep the cream cheese at room temperature: Bring the cream cheese to room temperature before starting the recipe. Cream cheese that softens at room temperature helps to ensure the smooth consistency of the cheesecake.
  • Add Eggs One by One: Add the eggs one by one and mix each one well. This ensures that the cheesecake mixture is homogeneous.
  • Add the ingredients in order: Adding the ingredients in order according to the recipe is important to maintain the consistency and flavour of the cheesecake. Follow these steps without skipping.
  • Controlled Baking in the Oven: It is important that the edges of the cheesecake are browned and the centre is cooked enough to shake slightly. A controlled cooking process in the oven ensures that the cheesecake cooks homogenously.
  • Wait patiently for the cooling process: Do not put the cheesecake directly into the refrigerator after removing it from the oven. Let it cool slowly, first at room temperature and then in the refrigerator.
  • Resting in the Refrigerator: The cheesecake should rest in the refrigerator for at least 4-5 hours. This time allows the cheesecake to take its consistency well.
  • Waiting Before Service for Sauce Addition: After slicing the cheesecake, wait for a while before serving to add fruit sauce on it. Thus, the sauce holds better on the cheesecake.
  • Use a Hot Knife When Cutting: Heat your knife with hot water while slicing the cheesecake. This helps the cut to be cleaner and smoother.
  • By following these tricks, you can prepare a perfect Philadelphia Cheesecake and indulge your palate. Bon Appetit!
