  • 1 medium tomato, diced into small cubes

  • 1/2 cup red onion, diced

  • 1/4 cup fresh coriander, chopped

  • 1 jalapeño pepper, seeds removed and chopped

  • 2 tbsp fresh lime juice

  • 2 tbsp extra virgin olive oil

  • 1 tsp agave syrup or honey

  • 1/2 tsp cumin powder

  • 1/2 tsp chili powder (optional, for extra heat if using chipotle sauce)

  • Salt and pepper
