  • 4 rockfish fillets

  • Half a glass of olive oil

  • 2 cloves of garlic (optional, finely chopped)

  • Half lemon juice

  • Salt and black pepper (according to your taste)

  • Fresh thyme or rosemary (optional, chopped)


  • Preheat the oven to 200°C (180°C in a fan oven).
  • Wash the rockfish fillets and pat dry gently with paper towels. Then place the fish on a baking tray.
  • Mix the olive oil in a bowl with the lemon juice, garlic, salt and pepper. Optionally add chopped fresh thyme or rosemary.
  • Rub the olive oil mixture on both sides of the rockfish fillets. It is also preferable to leave the fish for a while to absorb the flavour.
  • Place the baking tray in the preheated oven and bake the fish for 15-20 minutes or until the fish is lightly browned. The cooking time may vary depending on the thickness of the fish, so make sure that the inside of the fish is white and well cooked.
