Ingredients

  • 4 rockfish fillets

  • Half a glass of olive oil

  • 2 cloves of garlic (optional, finely chopped)

  • Half lemon juice

  • Salt and black pepper (according to your taste)

  • Fresh thyme or rosemary (optional, chopped)

Directions

  • Preheat the oven to 200°C (180°C in a fan oven).
  • Wash the rockfish fillets and pat dry gently with paper towels. Then place the fish on a baking tray.
  • Mix the olive oil in a bowl with the lemon juice, garlic, salt and pepper. Optionally add chopped fresh thyme or rosemary.
  • Rub the olive oil mixture on both sides of the rockfish fillets. It is also preferable to leave the fish for a while to absorb the flavour.
  • Place the baking tray in the preheated oven and bake the fish for 15-20 minutes or until the fish is lightly browned. The cooking time may vary depending on the thickness of the fish, so make sure that the inside of the fish is white and well cooked.
  • Serve the cooked rockfish hot. Garnish with fresh thyme or rosemary and serve with sliced lemon.

Notes

  • Quality of Ingredients: Pay attention to the freshness of the ingredients you will use in the rock fish recipe. The dish made with fresh and high quality ingredients will be much more successful in terms of flavour.
  • Drying the Fish: After washing the rockfish fillets, gently dry them with paper towels. This will remove excess water from the fish and allow the olive oil mixture to adhere better.
  • Olive Oil Mixing: When preparing the olive oil mixture, use lemon juice, garlic, salt and pepper in a balanced way. Lemon juice will add freshness to the fish.
  • Marinating Fish: Letting the fish marinate with olive oil mixture for a while allows the spices and lemon juice to absorb better. However, waiting too long may affect the texture of the fish.
  • Cooking Time Control: The cooking time of rock fish fillets varies depending on the thickness of the fish. Make sure the inside of the fish is white and well cooked, but avoid overcooking, as this can cause the fish to dry out.
  • Oven Temperature: Preheat the oven and bake at the temperature indicated in the recipe. This ensures that the fish cooks evenly.
  • Serving: The flavour of rockfish is maximised when served hot. You can serve it with sliced lemon to give the fish a fresh and light flavour.
  • Bon Appetit.
