  • 4 salmon fillets

  • 2 tablespoons of olive oil

  • 2 tablespoons fresh lemon juice

  • 3 cloves of garlic (crushed)

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon freshly chopped rocket (optional, for serving)

  • Sliced lemon (for serving)


  • Preheat the oven to 200°C (180°C fan).
  • Wash the salmon fillets and pat dry gently with paper towels.
  • In a mixing bowl, combine the olive oil, lemon juice, crushed garlic, salt and pepper.
  • Place the salmon fillets on a baking tray and brush them with the olive oil mixture.
  • Bake the salmon in the preheated oven for 15-20 minutes or until the salmon is cooked through.
  • Place the cooked salmon on serving plates, top with freshly chopped rocket and sliced lemon.
  • Serve hot and optionally serve with rice or vegetables on the side.
